Savory Sourdough Discard Morel Green Onion Cheese Pancakes
With spring fast approaching, it’s time to pull out last year‘s morels and use them up to make room for the new. This recipe uses the discard from sourdough, which is uniquely sour and funky, giving these pancakes a distinct flavor that complements the morels and green onions very well. Savory pancakes are extremely versatile, come together quickly, and are absolutely delicious.
Ingredients
- 1 oz morels dried
- 4-5 green onions chopped finely
- 1/2 c shredded cheese
- 2 tbsp feta cheese or cotija cheese, optional
- 1/2 c sourdough starter discard
- 1 c flour all purpose
- 1 egg
- 1 1/2 c water
- 1-2 tsp kosher salt or to taste
- 1 tsp morel powder, optional
- 1/4 tsp baking soda optional
Instructions
- Start by boiling your water and pouring it over the dried morels in a heat proof bowl or cup, let sit 15-30m to rehydrate and cool.
- In a bowl, mix your sourdough discard with flour and egg - mix briefly then start adding the morel rehydration liquid (half a cup at a time) until you achieve a runny but still thick pancake consistency (you can let this mixture sit and ferment for several hours if you want).
- Once you are happy with the consistency, add in your rehydrated morels (chop into smaller pieces if you have large morels), green onion, cheeses, and seasonings.
- Fold mixture until everything is incorporated, then portion out pancakes into a pre-heated non-stick pan with some neutral oil or butter.
- Cook about 4 minutes per side or until the pancakes look sufficiently golden brown and delicious.
- Serve plain or with some sour cream and hot sauce.
