This is a quick and surprisingly good vegetarian rendition of a BBQ sandwich. Use your favorite sauce and you can't go wrong.

Ingredients
  

  • 1 lb oyster mushrooms
  • 1 tbsp butter or cooking oil of choice
  • 2 tbsp dry BBQ seasoning or to taste
  • 1 tbsp Worcestershire sauce
  • ¼ c BBQ sauce
  • 4 buns

Instructions
 

  • Hand shred fresh oyster mushrooms. Dry saute in skillet on medium-high heat to release liquid, continue cooking to evaporate most of the liquid. Add butter or cooking oil of choice to the skillet to brown the mushrooms a little.
  • Sprinkle on your favorite BBQ dry rub seasoning and add Worcestershire sauce.
  • Reduce to low heat, add your favorite BBQ sauce, and simmer 10 to 15 minutes for all the flavors to meld together.
  • Serve on warm toasted buns. Top with coleslaw if desired.
