Irish Soda Mushroom Bread
An Irish soda bread recipe that makes use of powdered mushrooms, one or numerous species.
Ingredients
- 1 ¼ c all-purpose flour
- 1 c whole wheat flour
- ½ c instant oatmeal
- ½ c mushroom ** mushroom powder - use one or a blend of many different mushrooms species, as you like
- 1 tsp salt kosher
- 1 tsp baking soda
- 4 tbsp unsalted butter ½ stick; cold and cut into small pieces
- 1 ⅓ c buttermilk cold
Instructions
- Position oven rack to the center position. Preheat oven to 450°F (230°C).
- Line a baking sheet with parchment paper and set aside. Measure out ingredients.
- In a large mixing bowl whisk together flour, mushroom powder, salt, and baking soda.
- Add cold butter to the bowl and cut through the flour mixture. To do this, press down on the fat with the wires of the pastry blender or the tines of a fork as you move it around the bowl. Continue cutting the fat into the flour until it is all about the size of pebbles and the mixture looks like a coarse meal.
- Add oats and cold buttermilk and stir until a soft dough forms.
- Flour a work surface and transfer the dough to it. Flour the top of the dough and your hands. Gather it together into one mass.
- Knead the dough gently a few times until you have a more cohesive dough. Only spend about 30 seconds on this to avoid overworking the gluten.
- Transfer the dough to the prepared pan and shape it into a disk that is about 2½ inches thick.
- Sprinkle with some extra instant oats for decoration.
- Use a sharp knife to cut a deep X across the dough.
- Bake for 26-30 minutes, until deep golden brown and a toothpick comes out clean from the center.
- Enjoy warm or cooled with butter or spread of your choice.
